Snow Casserole

There’s snow on the ground and a casserole in the oven.

Actually on the stove, cooling just enough to be eaten.

Ham, potato, cheese casserole.

-3 potatoes thinly sliced
-small onion thinly sliced
-cheddar cheese
-shredded parmesan cheese
-shredded leftover ham found in the freezer

For the “sauce”; about 2 cups water, chicken bouillon, flour, butter, garlic powder, curry powder, thyme (whisk together until smooth).

Butter the casserole dish, layer potatoes/onion/ham with sauce and cheese. Top with parmesan.

Bake in the oven at 350°, covered with foil for about 30 mins. Uncover and cook until top is crispy, about 20-30 more mins (or my oven is bad, a plausible option)

Tonight it snows, anxiety builds, tomorrow I move. Monday is a new job, new place, new routine. So for tonight, there is a warm casserole, crowded couch, and a lot of reflection.
