Lunch for me is usually either a big happy salad, leftovers from dinner, or a carefully thought out, proportioned meal.
This week I had the forethought to make something for a few days worth of lunches. forethought, not energy
So I let the crockpot out of the cabinet and ended with delicious results.
One bag of frozen peppers and onions, four frozen chicken cutlets, one can of crushed tomatoes (I fanatically buy these in bulk when they go on sale), and a dash of a lemon garlic marinade/dressing. Swoosh it all together, cover, cook on low for 8 hours.
The chicken was moist and you definitely didn’t need a knife to cut it. I portioned out the chicken into containers and topped with spoonfuls of veggies or sauce. This would be great alone, with pasta or rice, or even spaghetti squash or a heart sautéed veg.
